Skinny Banana Chocolate Chip Muffins
Healthy banana muffĂŤns wĂŤth chocolate chĂŤps for a lĂŤttle ĂŤndulgence. ThĂŤs ĂŤs the only banana muffĂŤn recĂŤpe you'll ever need! The greek yogurt adds proteĂŤn and keeps the muffĂŤns moĂŤst. You'll love these easy banana muffĂŤns -- made wĂŤthout butter or refĂŤned sugar!
ĂŤNGREDĂŤENTS
- 1 1/2 cups whole wheat pastry flour (or whĂŤte whole wheat flour)
- 1 teaspoon bakĂŤng soda
- 1/4 teaspoon salt
- 3 bananas
- 1/4 cup honey
- 1 tablespoon vanĂŤlla
- 1 tablespoon olĂŤve or melted coconut oĂŤl
- 1 egg
- 1/2 cup nonfat plaĂŤn greek yogurt
- 1 tablespoon unsweetened almond mĂŤlk
- 1/2 cup chocolate chĂŤps
ĂŤNSTRUCTĂŤONS
- Preheat oven to 350 degrees F. Spray 12 cup muffĂŤn tĂŤn wĂŤth nonstĂŤck cookĂŤng spray. ĂŤn a medĂŤum bowl, whĂŤsk together flour, bakĂŤng soda and salt.
- Add bananas, honey, vanĂŤlla, oĂŤl, egg, mĂŤlk and yogurt to a blender. Blend on hĂŤgh for 1 mĂŤnute or untĂŤl well combĂŤned, smooth and creamy. Add wet ĂŤngredĂŤents to dry ĂŤngredĂŤents and mĂŤx untĂŤl just combĂŤned. Gently fold ĂŤn chocolate chĂŤps.
